Rose Hip Sorbet

This recipe uses whole, crushed, rose hips to flavour and colour the liquid that's used to make the sorbet. As the liquid is strained (you must use a fine-meshed sieve), there's no danger of the irritant seeds making their way into the sorbet.

Ingredients:

180g sugar
900ml water
70g fresh rose hips, crushed

Method:

Add the sugar and water to a pan. Bring to a boil then take off the heat and add the rose hips.

Allow to cool to room temperature then strain to remove the hips.

Place in an ice cream maker and allow to form a sorbet, according to the manufacturer's instructions.
