Salatǎ de Varzǎ (Romanian Cabbage Salad) is a traditional Romanian recipe for a classic salad of shredded cabbage dried with salt in a cider vinaigrette dressing seasoned with salt and black pepper. Ingredients:
1 small white cabbage, finely shredded (a chiffonade)
2 tbsp olive oil
3 tbsp cider vinegar
salt and freshly-ground black pepper, to taste
Method:
Break the shredded cabbage up into a large bowl and season liberally with salt (add plenty of salt, as this will help dry out the cabbage). Toss to mix thoroughly, cover and refrigerate for 1 hour. After this time drain away any excess liquid then place the cabbage in a cloth and squeeze to remove any liquid from it. Transfer to a serving bowl and dress with the olive oil, vinegar and black pepper.
Toss to combine and serve as a side dish for fatty meats or roasts.
