A ‘swallow’ in Nigeria is an accompaniment to a soup that only needs tearing off and can be swallowed without chewing, hence the name. Typically, an indentation is made with the thumb which is then dipped in the soup.

Ingredients:

200g (2 cups) Wheat meal (I used honeywell brand)
1l (4 cups) Water

Method:

Add the water to a small pot, bring to a boil then add about 500ml (2 cups) and set this aside.

Whilst stirring constantly, slowly pour the wheat meal into the pot with the remaining 500ml (2 cups) water. Stir in one direction only (either clockwise or anticlockwise so it doesn’t form lumps).

Still stirring, add in the reserved 500ml water into the pot then cover and leave to cook for about 15 minutes, until the wheat is almost dry. The mixture will be very thick. Now turn the mixture over from the base of the pot. At this point it can be shaped into any form you like.

For the swiss (jelly) roll type, turn the mixture onto a sheet of clingfilm (plastic wrap), set another sheet of clingfilm on top then roll out to your desired thickness with a rolling pin. You can slice to make this neater, if desired, then roll up from the short end and serve.

This can also be cooked ‘fufu’ style, in which case, prepare as above then simply roll into a ball and serve as an accompaniment.
