Rock Cakes

Rock Cakes is a traditional British recipe for a classic hard scone-like cake of a blend of flour, spice, butter, sugar and dried fruit bound with egg and milk that is an excellent accompaniment to tea or coffee. I was looking through my list of recipes the other day and was surprised to find that I did not have a recipe for rock cakes. When I was a child, my aunt would make these whenever I stayed with her and they bring back very fond memories. So I decided it was high time I shared the recipe.

Ingredients:

200g (1 1/2 cups) self-raising flour
pinch of salt
1/2 tsp mixed spice (pumpkin pie spice)
100g (1/2 cup) unsalted butter
50g (1/4 cup) caster sugar
100g (3 1/2 oz) mixed dried fruit
25g (1 oz) mixed peel, chopped
1 medium egg
2 tbsp milk

Method:

Sift together the flour, salt and mixed spice into a bowl. Add the butter and either rub or cut into the flour until the mixture resembles fine crumbs.

Stir in the sugar, dried fruit and peel then form a well in the centre and and add the egg and milk. Using a palette knife, bring the ingredients together to form a stiff dough. Spoon into 12 mounds on a greased baking tray then transfer to an oven pre-heated to 180°C (360°F) and bake for between 12 and 15 minutes, until golden brown.

When done, remove from the oven and allow to cool for 5 minutes. Remove the rock cakes from the tray and sit on a cooling rack to cool completely before serving.

As a variant, to make jewelled rock cakes add chopped glacé cherries (green and red ones) to the basic batter.
