These are classic Congolese cakes made from a baked custard that's formed from a blend of milk, coconut, sugar and eggs.

Ingredients:

200ml fresh, whole, milk
300g freshly-grated coconut
200g powdered sugar
4 eggs

Method:

Combine the milk, coconut and sugar in a pan. Heat gently, stirring, until the sugar has dissolved. Beat in the eggs, one at a time and cook gently until the mixture thickens.

Take off the heat, turn into a bowl and allow the mixture to cool then cover with clingfilm (plastic wrap) and set aside in the refrigerator to cool.

Spoon the dough onto a baking tray lined with parchment paper (there will be enough for 40 rock cakes). Form the mounds into small pyramids then transfer to an oven pre-heated to 230°C and bake for about 9 minutes, or until the tops of the rock cakes are lightly browned.

Allow to cool before serving.
