BRochers Congolaise (Congolese Rock Cakes) is a traditional Congolese (from the Republic of the Congo) recipe for a classic snack or cake of a custard mixed with grated coconut that's baked until harened. Combine the milk, coconut and sugar in a pan. Heat gently, stirring, until the sugar has dissolved. Beat in the eggs, one at a time and cook gently until the mixture thickens.
Take off the heat, turn into a bowl and allow the mixture to cool then cover with clingfilm (plastic wrap) and set aside in the refrigerator to cool.
Spoon the dough onto a baking tray lined with parchment paper (there will be enough for 40 rock cakes). Form the mounds into small pyramids then transfer to an oven pre-heated to 230°C and bake for about 9 minutes, or until the tops of the rock cakes are lightly browned.
