Roast Veal Loin with Garlic, Rosemary and Lemon Pesto

Ingredients:
1kg loin of veal
2 garlic cloves, finely chopped
4 sprigs of rosemary, finely chopped zest of 2 lemons
1 tbsp olive oil
Method:
Combine the garlic, rosemary, lemon zest and olive oil in a food processor and pulse to a smooth paste. Spread this purée over the entire surface of the veal then place in a roasting dish before transferring to an oven pre-heated to 170°C. Roast for 50 minutes, or until the veal is done through then remove from the oven, cover with foil and allow to rest for 20 minutes before carving.
