Rich Rum Truffles is a traditional British recipe for a classic Christmas treat of truffles made from a blend of chocolate, butter, icing sugar and madeira cake crumbs bound with egg yolks and flavoured with rum. Break the chocolate into small pieces and combine with the butter in a heat proof bowl. Sit over a pan of barely-simmering water and stir until smooth and melted.
Take off the heat and stir in the sugar, cake crumbs and egg yolk. Add the rum and stir until completely and evenly combined then set aside for 5 minutes to cool slightly.
After this time, take pieces of the mixture and roll these between your hands to form balls about the size of a walnut. Roll these balls in the cocoa powder to coat then set aside to harden completely.
Wrapped in sweet (candy) papers these can be arranged in a box as a gift or they can be mounded on a serving dish and served as an after-dinner treat with coffee.
