This is a classic pastry, typically used for vegetable pies and tarts where the herbs in the pastry complement the flavours of the vegetables.

Ingredients:

250g plain flour
115g unsalted butter, chilled
1/2 tsp salt
1/2 tsp fresh thyme, chopped
1/4 tsp dried oregano, crumbled
2 tsp chives, chopped
1 tbsp fresh parsley, chopped
5 fresh basil leaves, torn into pieces
1 egg yolk beaten with 2 tbsp iced water

Method:

Sift the flour and salt together into a mixing bowl. Cube the butter and add to the flour mix then rub into the flour with your fingertips until the mixture comes to resemble fine breadcrumbs.

Stir-in the herbs, mixing thoroughly then add the egg yolk and iced water mixture. Mix to a stiff crumbly paste with a pastry knife (or any round-ended knife will do). Draw the dough together with your fingers (add a little more water if the dough is too stiff) then turn out onto a lightly-floured surface and knead until the dough becomes smooth and crack free.

This can be used immediately but it will store in the refrigerator if covered in clingfilm for 24 hours. It can also be frozen for several weeks but needs to be completely thawed before use.
