Rich Chocolate Cake

Ingredients:

180g dark chocolate (at least 75% cocoa solids)
2 tsp honey
180g butter
90g caster sugar
90g ground almonds
5 eggs, separated
1 tsp sal volatile
60g flour
white fondant icing, or glacé icing flavoured with rum

Method:

Break the chocolate in a bain-marie (double boiler), mix with the honey and heat until just melted. Meanwhile, cream together the butter and sugar until light and fluffy. Beat in the melted chocolate then add the almonds and egg yolks and beat until thoroughly combined.

Add the egg whites to a clean and dry bowl then whip stiffly before folding into the chocolate mix with the sal volatile and the flour. Turn into a greased and floured springform cake tin then transfer to an oven pre-heated to 160°C and bake for about 50 minutes, until cooked through (when a skewer inserted into the centre of the cake emerges cleanly).

Remove from the oven, allow to cool in the tin for 10 minutes then transfer to a wire rack to cool completely. Decorate with the fondant or glacé icing (flavoured with rum) whilst still warm and slice when cold.
