Rice Krispies Easter Eggs

Rice Krispies Easter Eggs is a traditional American recipe for a classic Easter egg made from a mix of sugar, peanut butter and Rice Krispies that are shaped into eggs and coated in milk chocolate before chilling and serving. Ingredients:

200g sugar
200g crunchy peanut butter
140g Rice Krispies
2 tbsp vegetable oil
1/4 tsp vanilla extract
milk chocolate, to coat

Method:

Combine the sugar, peanut butter, oil and vanilla extract in a bowl and stir to combine. Now add the Rice Krispies and stir to blend well. Take pieces of the mixture and shape into eggs then transfer to a baking tray and place in the freezer for 2 hours to set.

At the end of this time carefully melt the milk chocolate. Allow to cool slightly then dip the eggs in this to coat evenly. Transfer to greaseproof (waxed) paper and allow to set completely before serving.
