Rhubarb Lemonade

Rhubarb Lemonade is a modern British recipe for the classic drink made from stewed rhubarb juice mixed with lemon juice and sweet wine that's served chilled and which makes an elegant drink for summer or even for Valentine's day. Ingredients:

700g rhubarb, trimmed and cut into 3cm lengths (no need to peel)
pared zest of 1 lemon
100ml water
140g unrefined cane sugar
juice of 1 lemon
100ml sweet white wine

Method:

Combine the rhubarb, lemon zest, water and sugar in a saucepan. Cover with a tight-fitting lid, bring to a simmer and cook for about 10 minutes, or until the rhubarb has softened and begun to break down.

Take off the heat and turn the mixture into a fine-meshed sieve. Allow the rhubarb liquid to drain into a bowl (you do not need the rhubarb solids for this dish reserve for making a pie or crumble).

Take the rhubarb juice and mix in the sweet wine. Add lemon juice to taste then pour into a jug and chill in the refrigerator. Serve chilled.

This makes an excellent summer drink, or as an accompaniment to a Valentine's day dessert.
