Ingredients:
400g rhubarb, trimmed and cut into 3cm lengths
juice of 2 oranges
120g caster sugar
chilled sparkling water, to serve
Method:
Combine the rhubarb, orange juice and sugar in a saucepan. Heat gently until the sugar has dissolved then increase to a simmer and cook gently for about 10 minutes, or until the rhubarb is soft. Take off the heat and set aside to cool.
Press the cooled mixture through a fine-meshed sieve to extract the liquid. Pour into bottles and store in the refrigerator (it will keep for up to a month). To serve, dilute the cordial with a little sparkling water. This makes an excellent summertime drink for the outdoors.
