The Tandoor is the clay cooking oven of North-eastern India. This marinade is the classical way of preparing meats for cooking in the tandoor. I'm including two recipes for the Tandoori marinade in this book. The recipe given below is a restaurant recipe and will represent the kind of tandoori flavour that most people have encountered. The next recipe is a more traditional tandoori marinade.
Add the yoghurt, ginger, chillies and garlic to a blender and blend until they form a smooth paste. Empty into a bowl and add all the remaining ingredients. Beat until smooth and glossy (This paste will keep in an airtight jar in the fridge for up to 4 days or it may be frozen).
To create the Tandoori marinade add the blended paste to a bowl and mix in all the other ingredients from your recipe. Gently beat into a smooth paste with a whisk then add your meat or vegetables, stir to coat and set aside for at least 30 minutes to marinade.
