Method:

Wash the meat then set in a colander to drain. Add a little oil to a flame-proof casserole and use to fry the onion and meat for about 4 minutes, or until the onion is just tender. Stir in the ginger-garli paste along with the chilli powder, turmeric and salt. Fry briefly then add 400ml water. Bring to a boil, reduce to a simmer and cook, covered for about 40 minutes, or until the meat is very tender.

Add the lemon juice and saffron threads and continue cooking, uncovered, until the gravy has thickened. Transfer to a serving bowl and serve immediately, accompanied by warmed parathas or aloo paratha.
