This is classic Greek recipe that makes a wonderful sauce for just about any fish or seafood. It can even be used for strongly-flavoured vegetables such as courgettes and broccoli.
Ingredients:
120ml olive oil
1 onion, finely chopped
1 clove garlic, finely chopped
2 carrots, chopped or shredded
80g chopped fresh
parsley
50g finely-chopped celery
1 tbsp flour
4 chopped fresh tomatoes
250ml fish stock
juice of 1 lemon
salt and black pepper to taste
Method:
Heat the oil in a medium-sized pan and sauté the onions with the garlic. When softened add the carrots, parsley and celery and fry for five minutes. Sprinkle the flour over the vegetables and mix into the oil. Fry for about a minute to cook the flour. Add the tomatoes and the fish stock and cook over medium heat until the vegetables are completely softened.
Using a blender or food processor, puree the mixture and return it to the pot and cook it down, over medium heat until it is thick. Remove from the heat and stir in the lemon juice. The sauce can be used immediately or it can be stored in the fridge for up to a week.
