Réchauffé Chicken

This is a classic curried leftovers recipe from Kenya.

Ingredients:

500g cooked rice
4 left-over roast chicken portions
1 onion, sliced into thin strips
2 garlic cloves, chopped
1 red chilli, minced
2 tbsp fresh ginger, grated
1 tsp curry powder
1/2 tsp ground turmeric
1/2 tsp ground cumin
2 tbsp oil

Method:

Place a pot over medium heat. Once hot add the oil and use to fry the onion for about 6 minutes, until golden brown.

Scatter over the curry powder, turmeric and cumin and stir to combine. Now add the garlic, chilli and chicken. Stir to coat in the onions then add 250ml (1 cup) water and bring to a simmer. Cover and cook for 10 minutes.

Now stir in the rice and continue cooking for about 10 minutes, until all the ingredients are heated through and the liquid has almost completely evaporated away.

Season to taste with salt and black pepper and serve.
