Réchauffé Chicken is a traditional Kenyan recipe for a classic French-inspired dish of curried cooked rice and leftover roast chicken with onion, garlic and chillies. The full recipe is presented here and I hope you enjoy this classic Kenyan version of: Réchauffé Chicken.
Place a pot over medium heat. Once hot add the oil and use to fry the onion for about 6 minutes, until golden brown.
Scatter over the curry powder, turmeric and cumin and stir to combine. Now add the garlic, chilli and chicken. Stir to coat in the onions then add 250ml (1 cup) water and bring to a simmer. Cover and cook for 10 minutes.
Now stir in the rice and continue cooking for about 10 minutes, until all the ingredients are heated through and the liquid has almost completely evaporated away.
Season to taste with salt and black pepper and serve.
