Raspberry Preserve is a traditional British recipe for a classic conserve of raspberries lightly boiled in sugar syrup that are potted in jars and stored and which can be used as a tea-time spread or employed in place of fresh fruit. Ingredients:
550g raspberries
550g sugar
60ml water
Method:
Add the sugar and water to a pan and bring to a boil. As soon as the mixture is boiling add the raspberries. Return to a simmer and cook for five minutes.
Ladle into jars that have been sterilized and warmed for 5 minutes in an oven set to 100°C. Allow 1cm head space then seal, allow to cool and store. This will keep for about 6 months.
