Rarebit Toasts is a traditional British recipe for a classic snack of sourdough bread slices that are toasted on sone side, covered on the untoasted side with a mix of cheese, mustard, spring onions, Worcestershire sauce and eggs, before being grilled until golden and served hot; this dish makes an excellent snack for Bonfire Night. Rarebit Toasts: Classic British recipe for a snack or supper dish of a blend of cheese, mustard, egg and Worcestershire sauce grilled on a slice of bread, shown garnished with sliced spring onions.
Slice the Breads quite thickly, place under a hot grill and toast for between 2 and 3 minutes, until one side is golden brown. In the meantime, mix together the cheese, egg, mustard and Worcestershire sauce in a bowl.
Spread this mixture over the untoasted side of the bread then place back under the grill and cook for about 3 minutes, or until the cheese is melted and coloured golden brown.
Serve immediately. If you want an additional kick, sprinkle a little Tabasco sauce on the top.
