Rack & Ruin: Classic British recipe for a barbecue dish of racks of lamb in an oil, balsamic vinegar, lemon juice, rosemary and onion marinade that's cooked on a barbecue.
Ingredients:
4 racks of lamb (each one with 4 cutlets)
2 tbsp extra-virgin olive oil
1 tbsp balsamic vinegar
1 tbsp lemon juice
3 tbsp fresh rosemary, finely chopped
1 small onion, finely chopped
salt and freshly-ground black pepper, to taste
Method:
Place the lamb racks in a large, shallow, non-reactive dish. Combine the oil, vinegar, lemon juice, rosemary and onion in a jug and stir to combine. Season to taste with salt and black pepper then pour over the lamb.
Turn the lamb cutlets to coat evenly in the marinade then cover with clingfilm (plastic wrap) and set aside in the refrigerator to marinate for 1 hour, turning the meat occasionally.
After this time, drain the lamb (reserve the marinade). Place on a barbecue over medium-hot coals and cook, turning frequently and basting with the marinade for about 10 minutes per side.
Serve immediately.
