Qumbe (Coconut Squares) is a traditional Somali recipe for a classic milk and sugar toffee with coconut flakes and cardamom that's cut into squares and served as a dessert. The full recipe is presented here and I hope you enjoy this classic Somali version of: Coconut Squares (Qumbe).
Place a pan over medium-high heat then add the milk and sugar and bring to a boil, stirring constantly. Once the mixture comes to a boil, turn down the heat (or the milk will boil over) and continue boiling and stirring constantly for a further 15 minutes.
At this point stir in the cardamom and coconut flakes. Continue cooking, stirring constantly, until all the liquid has been absorbed then reduce the heat to low and simmer gently for about 5 minutes.
Pour the resultant mixture into a greased pan (about 20 x 22cm is a good size). Smooth the top with the back off the spoon then press down on the qumbe to pack it tightly. Allow to cool then refrigerate for 1 hour to set. Cut into squares and serve on pieces of greaseproof paper.
