I've seen this described as a flan or custard flan, but in reality it's more like a basic crustless cheesecake with a caramel topping

Ingredients:

200g Granulated sugar
4 Eggs
400ml Sweetened condensed milk
400ml Evaporated milk
120g Cream cheese
1 tbsp Vanilla extract

Method:

Pre-heat your oven to 180°C.

In a saucepan, melt the granulated sugar over medium heat until it melts and then turns into a golden caramel.

Pour this caramel into the base of round cake tin, ensuring the bottom is evenly coated.

Meanwhile, in a blender, combine eggs, sweetened condensed milk, evaporated milk, cream cheese, and vanilla extract then process until smooth.

Pour the resultant mixture into the caramel-coated cake pan.

Cover the pan with aluminium foil and place it in a larger roasting tin. Fill roasting tin with hot water, creating a water bath for even baking.

Transfer to the centre of your pre-heated oven and bake for 50-60 minutes or until the Quesillo is set but still has a slight jiggle in the centre.

Allow the Quesillo to cool to room temperature, then refrigerate for at least 4 hours or overnight.

To serve, run a knife around the edges of the pan, place a serving plate on top, and invert the Quesillo onto the plate.
