There are two kinds of quesadillas available in Honduras. The first one refers to grilled tortillas with meat and cheese filling. The other one is a sweet-savory cake made with cheese, eaten during Christmas.
Ingredients:
For the Batter:
300g margarine
600g white sugar
250g plain (all-purpose) flour, sifted
120g rice flour
1 tbsp baking powder
6 eggs
500ml lukewarm milk
230g grated Parmesan cheese
For the Topping:
100g white sugar
65g plain (all-purpose) flour
75g sesame seeds
Method:
Preheat your oven to 175°C and lightly grease and flour a medium-sized glass baking dish.
In a bowl, cream together the margarine and 600g sugar until pale and fluffy. Add the eggs one at a time, beating thoroughly to combine after each addition. Mix together 250g plain flour, rice flour, and baking powder; add these to the creamed mixture alternately with the milk, stirring well between each addition. Slowly stir in Parmesan cheese then scrape the batter into the prepared baking dish.
In a small bowl, mix together the topping ingredients then sprinkle evenly over the batter in the cake pan.
Transfer to the centre of your pre-heated oven and bake for 45 minutes, or until a toothpick inserted in the centre emerges cleanly.
Transfer to a wire rack and allow to cool completely, then cut into squares and serve.
