Method:

Combine the apricot leather with the water in a large bowl and set aside for about 3 hours, stirring every hour to help the sheets dissolve. After this time, strain the liquid into a clean saucepan. Meanwhile, whisk together the cornflour and 250ml water until smooth. Add this slurry to the fruit leather liquid then place over medium heat. Cook, stirring constantly with a wooden spoon until the mixture comes to a boil. Reduce to a simmer then add the sugar and cook for 15 minutes, stirring constantly. Take off the heat.

Divide the walnuts between four dessert bowls then pour the hot liquid over the top. Set aside until cold then chill in the refrigerator for at lest 1 hour before serving as a dessert.
