In Pundabi cookery, near the end of cooking, a set of sweet and warm aromatic spices are added, which may be fried or cooked in stews and curries. This set of spices is called a 'Frying' Garam Masala. The spices are nor dry roasted to make this Garam Masala

Ingredients:

1 tbsp ground cinnamon
1/2 tbsp ground cloves
3/4 tbsp freshly-ground black pepper
3/4 tbsp ground green cardamom

Method:

Simply mix the spices together and store in an air-tight jar in a cool, dark, cupboard or store cupboard.

To use, simply add about 1 tbsp of the mix to your fried or stewed ingredients near the end of the cooking process.
