Punch à la Vanille (Vanilla Punch): A Malagasy recipe for a punch made from a blend of rum, white wine and lemonade flavoured with vanilla and mixed fruit.

Ingredients:

250ml white rum
750ml (1 bottle) white wine, well chilled
2 bourbon vanilla pods split lengthways
100g sugar
1 lemon
1/2 lime
2 oranges
3 passion fruit
1 ripe mango
3 lychees
500ml orange juice, well chilled
500ml lemonade

Method:

Cube the fruit then place in a large bowl. Add the vanilla pods and the sugar. Mix to combine then sprinkle over the rum. Stir the mixture until the sugar has dissolved then cover and set aside in the refrigerator to macerate for 48 hours, stirring occasionally.

Turn the fruit mixture into a punch bowl and stir in the white wine, orange juice and lemonade. Mix well and serve chilled.
