Ingredients:
1.3kg chicken
1 sprig thyme
1 bayleaf
150g roasted walnuts
50g butter
2 tbsp flour
2 tbsp vinegar
6 garlic cloves, crushed
salt and black pepper, to taste
Method:
Combine the chicken, thyme and bayleaf in a large pot. Cover with water then season liberally. Bring to a boil, reduce to a simmer, then cover and cook or about 80 minutes, or until the chicken is cooked through.
Remove the chicken from the pot and set aside to keep warm. Reserve 250ml of the stock and use the remainder to cook your rice.
Now prepare the sauce. Melt the butter in a pan then add the flour and stir to form a roux. Continue cooking the mixture until lightly browned then gradually stir-in the stock. Whisk until smooth then bring the mixture to a boil, stirring constantly. Add the vinegar, garlic and walnuts then season to taste. Continue cooking, stirring all the while, until warmed through.
Arrange rice on serving plates, place chicken pieces on top then serve the sauce over the chicken.
