Pudina tal-Hobz (Maltese Bread Pudding) is a traditional Maltese recipe for a classic dessert of a bread, sugar and margarnie pudding with eggs that's flavoured with fruit and walnuts before being oven baked. Ingredients:

2 large Maltese loaves (preferably of hobz bread), best if a day or two old
400g sugar
350g margarine (or butter)
3 eggs
freshly-grated zest of 1 lemon
2 tbsp cocoa powder
100g currants (or sultanas)
glacée cherries
500g dates cut into small pieces
60g walnuts or almonds, toasted and chopped
80ml brandy or rum (optional)

Method:

Cube the bread then soak in water for two hours, until completely soft. Drain the bread and squeeze out any excess water. Turn into a bowl, add the margarine and sugar then beat together to combine.

Beat the eggs in a small bowl then add to the bread mixture along with all the remaining ingredients. Turn the resultant batter into a well-greased loaf or cake tin then transfer to an oven pre-heated to 160°C and bake for about 60 minutes, or until the surface is golden brown and crisp.

This can be served hot, accompanied with custard, or can be served cold, either on its own or with cream.
