There are several types of mint chutney in Indian cuisine, this is the version typically used for chaats, rolls and sandwiches.
Ingredients:
25g (1 1/2 cups) mint leaves
1/2 tsp roasted cumin powder
1cm (1/2 in) piece of ginger, chopped
2 green chillies
salt, to taste
1/2 tsp lemon juice
1/2 tsp Chaat Masala
2 tbsp water (or as needed)
2 tbsp roasted peanuts
Combine the mint leaves, cumin powder, ginger, green chillies and chaat masala in a small food processor. Pulse to chop then add the lemon juice and roasted peanuts. Pulse to chop again then run the motor to form a smooth puree.
Season to taste with salt then add just enough water to give you a smooth but thick puree.
