This classic Portuguese dessert depends on Queijo de Tomar (Tomar cheese) in its preparation. This beloved cheese, crafted from the finest sheep's milk, boasts a semi-hard texture and a delicate whitish paste, making it a true delicacy for cheese connoisseurs worldwide. It's a small cheese, measuring 5cm in diameter and 4cm in height. This is typically served as a dessert.

Ingredients:

10 egg yolks
2 egg whites
280g of sugar
4 fresh Tomar cheeses (unsalted)

Method:

If your cheeses are salted soak them for at least 4 hours in cold water, changing the water several times before giving them a final rinse.

Now pass the cheeses through a fine-meshed sieve pressing down with the back of a spoon.

In a bowl, lightly mix the egg yolks, whites and the sugar. Stir in the finely grated cheese and mix without beating.

Tip the mixture into a greased cake mould (a tall bundt-type pan is typical). Transfer to the centre of an oven pre-heated to 160°C and bake for 45 minutes.

Allow to cool in the tin for 15 minutes then carefully turn out onto a plate. Allow to cool completely before serving.
