Pudim de Laranja (Orange Pudding)

Pudim de Laranja (Orange Pudding) is a traditional Mozambican recipe for a classic dessert of an egg custard flavoured with oranges cooked in a ring mould and served with an orange sauce. This is a classic Mozambican dessert dish made from an egg custard flavoured with oranges that's set in a ring mould and served with orange sauce.

Ingredients:

For the Pudding:
5 eggs
400ml milk
100ml orange juice
4 dessert spoons sugar

For the Orange Sauce:
100ml orange juice
3 dessert spoons sugar
finely-grated zest of 1 orange

Method:

For the pudding, beat together the eggs, milk, orange juice and sugar in a bowl. Grease a metal ring mould and pour in the custard. Sit in a deep roasting tin then pour in enough water to come half way up the side of the ring mould.

Transfer to an oven pre-heated to 180°C and bake for about 25 minutes, or until the custard has set. Remove from the oven and allow to cool slightly then unmould, whilst still warm, onto a serving plate.

For the syrup, combine the juice, sugar and orange zest in a small pan. Heat gently until the sugar has dissolved then bring to a simmer and cook, stirring constantly, until the volume has reduced to about 2/3.

Pour over the pudding and serve.
