Ingredients:

120ml lemon juice
4 tbsp butter
2 whole chicken breasts, split
salt and freshly-ground black pepper
35g fresh parsley, chopped

Method:

Melt the butter in a small pan and when melted take off he heat. Season the chicken with salt and black pepper then place in a baking dish (skin side up) before drizzling half the melted butter over the top. Transfer to an oven pre-heated to 220°C and roast for about 25 minutes, or until the chicken skin is crisp and golden brown and the meat juices run clear.

Transfer the meat to a warmed serving plate, cover and set aside to keep warm. In the meantime add the remaining butter to the pan juices and stir in before whisking in the lemon juice. Bring to a simmer hen add he parsley and season to taste with salt and black pepper. Pour the sauce over the chicken and serve.
