Pastelillos de Guayaba (Guava Pastries)

Also known as pastelitos de guayaba these are Puerto Rican pastries made with guava paste, cream cheese, and puff pastry. A classic snack or dessert served with coffee or tea.

Ingredients:

225g cream cheese, softened to room temperature
2 sheets frozen puff pastry, thawed for 15 minutes
1 egg, for the egg wash
1 tsp granulated sugar
1 tbsp water
1 block guava paste
2 tbsp icing sugar to garnish (optional)

Method:

Pre-heat your oven to 180C. Prep the egg wash by beating the egg in a small bowl with a tablespoon of water plus the granulated sugar. Set aside.

Lay out both sheets of puff pastry on a lightly-floured work surface. then prick it gently all over with the tines of a fork. Using a pastry or pizza cutter, cut each sheet into 9 equal sized rectangles.

Cut the cream cheese block and guava paste block into 9 slices. Lay one slice of each in the centre of 9 (ie half) of the puff pastry rectangles.

Top the guava and cheese with one of the remaining puff pastry rectangles and brush with egg wash. Transfer the pastelillos to a parchment lined baking tray then set in the centre of your pre-heated oven and bake for 15-20 minutes, or until they are golden brown and cooked through.

Sprinkle with the icing sugar, allow to cool and serve.
