Flan

This is the classic Puerto Rican dessert, made of a lusciously creamy custard filling topped with homemade caramel.
Ingredients:
For the Caramel:
200g granulated sugar
80ml water
For the custard filling:
450g tin of evaporated milk
250ml milk
1/2 tbsp vanilla extract
pinch of salt
5 eggs
100g white granulated sugar
Method:
Begin with the caramel: Combine the sugar and water in a saucepan over medium heat. Cook, stirring, until the sugar has dissolved. Watch closely and mix occasionally to ensure the sugar melts evenly (this can take up to 20 minutes).
Once sugar has melted and turns a light golden colour, carefully pour the caramel into an oven safe baking dish or ramekins. Tilt the dishes to evenly swirl the caramel before setting aside to cool.
For the custard filling: Add all remaining ingredients to a blender and process until velvety smooth. Pour the resultant mixture into baking dish/es to cover the caramel.
Sit the baking dish in a roasting tin then pour in enough water in the roasting tin to come half way up the sides of the baking dish containing the flan. Carefully transfer to the centre of an oven pre-heated to 180C and bake for 60-80 minutes, or until the centre looks jiggly but is no longer liquid. Remove the flan from the oven and allow time to cool.
Using a spatula or knife, loosen the edges around the flan and baking dish/es. Grab a platter to serve on and place it over the baking dish. Carefully flip the flan onto the platter, allowing the caramel to drizzle over the top.
Slice prior to serving.
