Achiote Oil is a commonly used Puerto Rican oil that is infused with annatto seeds that adds colour and flavour to any savory dish.

Ingredients:

250ml vegetable oil
2 tbsp Annatto seeds

Method:

Combine the oil and annatto seeds in a medium-sized saucepan over medium-low heat. Heat through and continue cooking gently for 5 minutes or until the oil begins to turn an orange/red colour. Turn off the heat and allow the oil to cool for 5 minutes.

Using a mesh strainer or cheese cloth, strain the seeds from the oil. Store the oil in jars or bottles where it will keep at room temperature for up to a month.
