In fact, this is not made with bananas at all, but with plantains. Plantains are actually cooking bananas in the AAB chromosome subgroup of bananas, a hybrid of Musa acuminata (dessert banana) and Musa balbisiana the wild plantain. Bananas and plantains are the main carbohydrate staple in Burundi. However, they do have one big issue, lack of vitamin A and a banana/plantain rich diet is often accompanied by vitamin A deficiency. This is why red Fe'i bananas from Asia are now grown in the country and these red coloured fruit with orange flesh are mixed with the East African highland Banana to yield better nutrition.

Ingredients:

4 unripe plantains, peeled
1 unripe Fe'i (orange fleshed) banana
salt, to taste

Method:

Bring a large pan of lightly-salted water to a boil. Peel and slice the bananas and plantains then drop in the water and boil for 20-25 minutes, until tender.

Drain the cooked plantains/bananas in a colander then transfer to a mortar and pound to a paste.

Season to taste with salt, then serve as an accompaniment or as a base for brochettes.
