Potatoes with Mushrooms: An Irish recipe for an accompaniment of potatoes baked in a dish with chestnut mushrooms, garlic and basil.

Ingredients:

500g potatoes, thinly sliced
olive oil, for brushing
350g chestnut mushrooms, thinly sliced
4 garlic cloves, crushed
leaves from 1 bunch of fresh basil
salt and freshly-ground black pepper, to taste

Method:

Take a baking dish that's large enough to hold the potatoes and mushrooms in a layer no more than 4cm thick and brush liberally with olive oil.

Toss all the ingredients together in a bowl then arrange them in an even layer in the baking dish. Transfer to an oven pre-heated to 180°C and bake for about 45 minutes, or until the potatoes are tender.

About half way through the cooking time turn the ingredients over. When cooked, remove from the oven and allow to cool for about 2 minutes before serving.
