Potato, Smoked Trout and Dill Salad: An Irish recipe for a classic salad of smoked trout and new potatoes in a mayonnaise, yoghurt, mustard and lemon juice dressing.

Ingredients:

675g new potatoes, scrubbed but not peeled
4 tbsp mayonnaise
4 tbsp natural yoghurt
1 tsp lemon juice
4 tsp whole-grain mustard
4 tbsp fresh dill, chopped
175g smoked trout, skinned and flaked
salt and freshly-ground black pepper, to taste

Method:

Bring a pan of very lightly salted water to a boil. Add the potatoes and cook for about 12 minutes, or until just tender.

In the meantime, combine the mayonnaise, yoghurt, lemon juice, mustard and dill in a bowl. Season to taste and stir to combine.

Drain the potatoes and set aside to cool in the colander for 5 minutes. Toss with the smoked trout and then mix with the dressing.

This potato salad can either be served warm or it can be allowed to cool and then chilled in the refrigerator for at least 60 minutes before serving.
