Potato and Salmon Parcels: An Irish recipe for a dish of new potatoes and salmon steaks baked in parcels with shallots, oil and chives.

Ingredients:

250g new potatoes, boiled in their skins
5 tbsp extra-virgin olive oil
2 shallots, chopped
1 small bunch of chives chopped
4 salmon steaks, skinned, boned and chopped
freshly-ground black pepper, to taste

Method:

Peel the potatoes as soon as they are cool enough to be handled, then dice them. Mix with 3 tbsp of the oil, the shallots and half the chives. Season to taste with black pepper.

Cut out four foil circles about 23cm in diameter the cut out four additional circles that are slightly larger than the original. Divide the potato mixture between the four larger circles and add 1/4 of the salmon flesh to each.

Sprinkle over the remaining oil and chives then add a generous twist of black pepper to each. Cover with the smaller foil circles then fold the edges to seal the contents within.

Arrange on a baking tray, then transfer to an oven pre-heated to 190°C and bake for about 8 minutes, or until the salmon is just cooked.

Remove from the oven and allow to cool. Serve the unopened parcels at room temperature.
