Potato Rye Bread: An Irish recipe for a yeasted rye bread that also contains mashed potato in the dough.

Ingredients:

300ml milk
350g strong white bread flour
115g potatoes, boiled until tender and passed through a fine-meshed sieve to purée
115g rye flour
1 1/2 tsp active, dried, yeast
pinch of salt

Method:

Place the potatoes in a bowl, add the milk and mash together with a fork. Sift over the flours and salt then sprinkle over the yeast before mixing all the ingredients together.

Knead the mixture until smooth then form into a ball and place in an oiled bowl. Turn to coat then cover with clingfilm (plastic wrap) and set aside until the mixture has doubled in volume.

Knock the dough back and for into a loaf shape. Transfer to a buttered 1.5l loaf tin then cover and set aside in a warm place until well risen.

Remove the covering and transfer the loaf tin to an oven pre-heated to 220°C and bake for 20 minutes or until the base of the loaf sounds hollow when tapped with your fingertips.

Transfer to a wire rack to cool before slicing and serving.
