Ingredients:

450g potatoes, cooked and mashed
25g pain flour
7g finely-chopped fresh dulse (or dried and re-constituted)
1 egg yolk
200g fresh breadcrumbs
6 tbsp butter
olive oil for frying
salt and freshly-ground black pepper, to taste

Method:

Melt the butter in a pan and when foaming add the breadcrumbs and fry until golden. Take off the heat, turn onto a plate and se aside until cooled.


Mash the potatoes in a large bowl then add the flour and dulse. Season to taste then mix thoroughly to combine. Add the egg yolk and mix in then divide the potato mix into patties (about 12). Roll in the breadcrumbs and pat to coat evenly then shallow fry in olive oil for about 4 minutes per side, or until heated through and serve as an accompaniment.
