Potato Chops

Potato Chops is a traditional Anglo-Indian recipe for a classic leftovers dish of spiced minced leftover meat sandwiched between two layers of mashed potatoes that's breaded and fried to cook. Another Anglo-Indian classic, typically served as a supper dish. This developed as a way of using-up leftovers from the traditional Sunday joint.

Ingredients:

600g (about), cold mashed potatoes
400g left-over meat, minced
200g onions, finely chopped
salt and freshly-ground black pepper, to taste
2 tsp green or red chillies, finely chopped
1 tsp ground cumin seeds
generous pinch of ground turmeric
juice of 1 lemon
2 eggs, beaten
200g breadcrumbs (about)
flour, for dusting
chopped parsley, to garnish

Method:

In a bowl, mix together the meat, onions, chillies, cumin seed, turmeric, lemon juice, salt and black pepper. Mix thoroughly to combine.

Take some of the mashed potatoes and pat into a chop-sized shape on a work surface. Top with the meat mixture then add a layer of potatoes on top, sealing the edges closed. Transfer to a lightly oiled baking tray. Repeat this process until all the potato and meat mixture has been up.

Transfer the chops to the refrigerator and chill for at least 30 minutes. After this time, sprinkle the potato chops with plain flour, dip in the beaten egg and then in the breadcrumbs, ensuring they are evenly coated.

Heat oil or ghee in a frying pan, add the chops and fry until golden brown all over. Serve hot, garnished with chopped parsley and accompanied by chutney.
