Potato Candy is a traditional British recipe for a classic hard sweet or candy made from potato and icing sugar that are rolled into balls then covered in melted chocolate and crushed peanuts. The full recipe is presented here and I hope you enjoy this classic British version of: Potato Candy.
Combine the potato, salt and vanilla in a large mixing bowl. Sift the icing sugar over the potato about 200g at a time and stir to combine. You should notice that the mixture initially liquefies and then gradually begins to thicken. When you reach the consistency of a stiff dough knead lightly (don't worry if you haven't used all the sugar, but add more sugar if you haven't reached this stage). After kneading cover the mixture with a damp clot then chill until you reach the stage where a small spoonful can be rolled into a ball.
Shape the mixture into 1cm balls and dip these into the melted chocolate (best done in a bain-marie) then roll in the peanuts. Set aside to cool and store in an air-tight tin.
