Pork Sparerib Soup

This a fresh take on the traditional Chinese pork spare-rib, adapting the classic dish to be served as a soup.

Ingredients:

450g pork spareribs
2 tbsp groundnut oil
1 onion, finely chopped
½ tsp sesame seed oil
pinch of sesame seeds
1 tsp salt
4 slices root ginger
1.5l water
4 spring onions, chopped (for soup)
2 spring onions, finely shredded (for garnish)
1 can bamboo shoots, shredded
handful of beansprouts

Method:

Heat the oil in a large pan and add the pork, ginger and onion. Cook for about 4 minutes until the onion begins to soften. Add the sesame seeds, season and cook for a minute.

When the stock has reduced, add the spring onions and beansprouts to the soup. Cook with stirring for 2-3 minutes, adding a dash of soy sauce to taste. When ready add a dash of sesame oil (if desired) then ladle into bowls and top with a sprinkling of sesame seeds and shredded spring onions.
