Pork and Bacon Meatballs

This is a classic recipe for pork meatballs flavoured with bacon, and onions that are finished in a tomato-based sauce with herbs. These can be served with pasta, mashed potatoes and are excellent with couscous. This is an economy family recipe.

Ingredients:

2 small onions, finely chopped
2 tbsp olive oil
4 garlic cloves, finely chopped<
2 rashers smoked streaky bacon, diced
400g pork mince
50g fresh white breadcrumbs
1 tsp finely-chopped sage leaves
500g tin chopped plum tomatoes
2 tbsp chopped fresh basil
1 tsp fresh chopped oregano
1 tbsp tomato puree
1 mild red chilli, finely chopped
6 sun-dried tomatoes, finely chopped
sea salt and freshly-ground black pepper

Method:

First make the tomato sauce. Add a small amount of olive oil to a heavy bottomed pan and fry one onion, two garlic cloves and the chilli in this. When they have softened add the tomatoes and the tomato puree along with the basil, oregano and sun-dried tomatoes. Season and bring to the boil then simmer for ten minutes to thicken.

Meanwhile fry the remaining onion and garlic in half the oil, add the bacon and cook for two minutes. Add the pork to a bowl, tip the bacon and onion mix into this along with the breadcrumbs and sage. Season, then mix thoroughly and shape into twenty even-sized balls.

Add the remaining oil to a large frying pan and fry the meatballs in this, turning them often. Add the tomato sauce, made as above and simmer for about 15 minutes. Serve the meatballs with pasta and top with grated parmesan.
