This recipe comes from Ley Mill in East Cornwall.

Ingredients:

60g fresh white breadcrumbs
300ml fresh, whole, milk
finely-grated zest of 1/2 lemon
juice of 1/2 lemon
sugar, to taste
1 large egg, separated

Method:

Combine the milk and breadcrumbs in a bowl. Stir well to mix then set aside to soak for 60 minutes.

After this time, stir the lemon zest and lemon juice into the milk and breadcrumb mix. Add enough sugar to sweeten to taste then whisk in the egg yolk. Add the egg white to a clean and dry bowl then beat until stiff before folding into the milk and breadcrumb mix.

Turn the mixture into a well-buttered pie dish then transfer to an oven pre-heated to 170°C and bake for about 30 minutes, or until set and golden brown on top.

Serve hot accompanied by clotted cream, cream or custard.
