Though Wales and Scotland are more well known for their sea trout today, it used to be that this fish was common in Cornwall's rivers. The fish numbers declined precipitously in the 1970s and 1980s, but the numbers are now starting to increase again.

This recipe was well known in the 1950s, but like the fish it's made from, it's hardly known today in its native Cornwall.

Ingredients:

5 sea trout fillets (about 175g [7 oz] each)
enough fish stock to cover

For the Green Mayonnaise:
150g (6 oz) picked and washed watercress
1 tbsp fresh parsley, chopped
1 tbsp fresh chives, chopped
300ml home-made mayonnaise
sea salt and freshly-ground black pepper, to taste

Method:

Combine the watercress and herbs in a blender, add the mayonnaise and blitz until chopped. Blitz again until the mixture is smooth and creamy, season to taste, turn into a bowl and chill in the refrigerator.

Arrange the sea trout fillets in a wide frying pan. Pour in just enough fish stock to cover the fillets then slowly bring just to a simmer. Poach the fish gently for about 5 minutes, or until just cooked through.

Remove the fish from the stock and transfer to a warmed serving dish. Serve accompanied by the green mayonnaise in a separate dish or bowl.
