Plum Muffins: A British recipe for a morning muffin that incorporates plums into the batter.

Ingredients:

90g butter, chilled and grated
200g plain flour, sifted
2 tsp baking powder
125g caster sugar
50g ground almonds
1 egg, beaten
175ml milk
8 large plums, halved, pitted and chopped

Method:

Grease or lint two six-well muffin tins and set aside.

Sift together the flour and baking powder into a large bowl, then stir in the grated butter, sugar and ground almonds.

Form the well in a centre, and add the egg and milk. Stir to combine then fold in the plums.

Divide the resultant mixture between the muffin wells, then transfer to an oven pre-heated to 180°C and bake for about 22 minutes, or until well risen, golden brown in colour and firm to the touch.

Set aside to cool for 5 minutes, then run the blade of a flat knife around each muffin to loosen them before removing from the tins.

Serve either warm or cold.
