Plum Muffins is a modern British recipe for a classic morning muffin that incorporates plums into the batter. The full recipe is presented here and I hope you enjoy this classic British version of: Plum Muffins.
Grease or lint two six-well muffin tins and set aside.
Sift together the flour and baking powder into a large bowl, then stir in the grated butter, sugar and ground almonds.
Form the well in a centre, and add the egg and milk. Stir to combine then fold in the plums.
Divide the resultant mixture between the muffin wells, then transfer to an oven pre-heated to 180°C and bake for about 22 minutes, or until well risen, golden brown in colour and firm to the touch.
Set aside to cool for 5 minutes, then run the blade of a flat knife around each muffin to loosen them before removing from the tins.
