Plantano Macho Frito (Fried Plantain Chips): A Equatorial Guinean recipe for a snack or accompaniment of plantain rounds fried in red palm oil until golden brown that can be served either sweet or savoury.

Ingredients:

3 large, ripe, plantains
red palm oil for deep frying

Method:

Peel the plantains and cut into slices about 1cm thick.

Add oil to a depth of 5cm in a wok and heat to 180°C (when a small cube of bread sizzles and turns golden as soon as it's dropped in the fat).

When the oil is hot, add the plantains and fry,in batches, until nicely browned.

Remove with a slotted spoon and drain on kitchen paper.

If serving as a sweet snack, sprinkle on a little sugar before serving. If presenting as a savoury snack sprinkle over a little salt and hot chilli powder.
