Placali is a traditional Ivorian (from Côte d'Ivoire) recipe for a classic accompaniment made from dissolved and sifted cassava sticks cooked to a thick paste and shaped into loaves before serving with an okra sauce. Place the water in a bowl, add the placali and mix into the water with your fingertips. Pass the mixture twice through a fine-meshed sieve to remove any fibres.
Set the bowl of diluted placali side and allow to sit for 30 minutes. After this time, pour off the white liquid from the surface. Turn the solids into a pan and place over medium heat. Cook, stirring constantly, until the mixture comes to a simmer. Now stir constantly (traditionally a wooden stirring stick is used), scraping the base and the sides of the pan to help get a smooth texture.
When the dough is thick enough to come away from the sides of the pan, take the pan off the heat. Allow the dough to cool until it can be handle. Using wet hands, scrape the dough into a mortar. Pound until smooth then shape into large dumplings.
