Ingredients:
2 fresh, ripe pineapples
sugar (you will need half the weight of sugar to prepared pineapple)
Method:
Using a sharp knife peel the pineapple, making certain that you cut off all the skin, including the eyes and any discoloured parts. Cut the flesh into slices then chop these slices finely (discard the core). Weight the fruit and add to a pan along with half the weight in sugar. Cover and set aside to stand over night. The following morning, bring to a boil and boil rapidly for 1 minute (do not cook longer than this as the fruit will discolour).
Ladle into sterilized jars that have been warmed in an oven set to 110°C for 15 minutes. Allow 1cm of head space then secure the lid, allow to cool and store.
